Add the chopped cabbage to the pot and cover with a lid. Let it simmer for a minute or two.

Made with cabbage, onions, tomatoes and a handful of everyday spices, this is an easy vegan dish that comes together with very little effort. It is the kind of meal I love making when I want something simple, comforting and full of flavour.
I sauté the onions and tomatoes before adding the cabbage. Then, I season it with vegetable stock powder, turmeric and curry powder. The result is a tender, flavourful cabbage curry with just the right amount of seasoning.
Cabbage - The best cabbage for this recipe is green cabbage. I use 1 small head
Cooking oil - Feel free to use the oil of your choice. I cooked with canola oil but I have since now cook with olive oil.
Onion - This is an aromatic flavour booster, making it an essential. I'm using a small brown onion.
Tomato - Adds acidic tanginess and enhances the sweetness of cabbage
Vegeta (vegetable stock powder) - This is vegetable seasoning, but feel free to use our preferred seasoning - for example chicken or beef stock cubes/powder.
Turmeric and curry powders - The only spices I'm using for this recipe, however, you can make this recipe yours by using your prefered spices.
Salt - For seasoning. Always tastse before adjusting the salt.

Beginner-friendly - No complicated cooking techniques are required.
Heat some cooking oil in a pot over medium heat. Add the chopped onions and sauté until they become translucent.
Add the chopped tomatoes and stir together with the onions. Cook for about a minute.
Add a little water, cover the pot and allow the onions and tomatoes to cook until they soften.

Gather all ingredients, then wash & chop the vegetables.
Cooking the Cabbage Curry
Once the cabbage is seasoned to your liking, turn off the heat. And just like that, the cabbage curry is ready to serve!

Why You'll Love This Cabbage Curry
Taste the cabbage and add salt according to your preference. Remember that the vegetable stock powder already contains salt, so add the salt gradually.
Allow everything to cook for a minute or two, so the flavours can come together.
3. Season the Cabbage




Add vegeta (vegetable stock powder) and turmeric powder. Stir well so the seasoning is evenly distributed throughout the cabbage.
Next, add the curry powder and continue stirring. At this stage, I don't add any additional water.
Serving the Cabbage Curry
Don't overcook the cabbage - Cabbage is best when it is tender but still has a little texture.
Adjust salt and seasoning to your taste - The amount of curry powder, salt and vegetable stock powder can be adjusted depending on your preference.
Don't add water - Cabbage releases moisture as it cooks, so you only need a small amount of water at the beginning.
Make it your own - You can adjust the spices depending on how mild or flavourful you like your cabbage.












Cabbage curry ready to serve
I served it with rice, but it also goes well with ugali, chapati or bread rolls.
You can also serve it as a side with your favourite grilled/fried meat, fish or chicken.
It also works beautifully as one of several vegetable dishes served as part of a larger family meal.

Storage - Store any leftovers in the fridge in an air-tight container for 3 to 4 days.
Reheat - Heat in the microwave. Sprinkle a little water to retain moisure and prevent the cabbage from drying out.
